Ingredients:
Dough:
- 1 Cup Milk, warmed
- 1 Tablespoon Sugar
- 1 1/2 Teaspoon dry active Yeast
- 3+ Cups Flour
- 1 egg
- 1 Tablespoon soft Butter
- 1/2 Teaspoon Salt
- 1 Egg and 1 Tablespoon water
Filling:
- 1/2 Pound Ground Beef
- 1 small Onion, finely minced
- 1 Cup Shredded Cheese
- 1 Teaspoon dry Thyme
- 1/2 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon dry Basil
- Salt and Pepper
- Warm the milk until it is warm but not hot.
- Add the sugar and yeast and stir well.
- Let the yeast proof for ten minutes.
- Mix in 2 cups of flour, one egg, 1 tablespoon butter and salt.
- Knead in as much of the remaining flour as possible.
- Dough should be soft and slightly sticky, but will pull away from the edges of the bowl easily.
- Cover bowl with a clean, damp tea towel and let rise in a warm place for one hour.
- While dough rises, make the filling.
- Heat a large frying pan over medium heat.
- Add the ground beef and minced onions to the pan.
- Scramble cook until beef is cooked through, onions are soft and beef has broken down into small bits. About 5-10 minutes.
- Stir in the thyme, basil, onion powder, garlic powder and season with salt and pepper.
- Remove pan from heat and stir in shredded cheese.
- Once the dough has risen, transfer dough to a well floured surface
- Divide dough into about 16 equal pieces.
- Work with one piece at a time and keep remaining dough covered.
- Roll one piece into a palm size circle, spoon a generous tablespoon of filling onto the dough.
- Roll the dough up over and around the filling and roll between your hands a few times to make a smooth ball.
- Place the rolled prioshki on a baking rry lined with parchment.
- In a small bowl whisk together the egg and water, brush the egg wash over the prioshki.
- Repeat the rolling, filling, shaping, egg wash steps with all remaining dough.
- Cover and let rise for another 30 minutes.
- Preheat oven to 375°F.
- Brush risen piroshkis again with egg wash right before baking.
- Bake piroshkis in heated oven for 20-25 minutes, until golden brown.
