Ingredients:
- 1 Egg Yolk
- 1/2 Cup Icing Sugar
- 1/2 Teaspoon Salt
- 1 Cup Butter
- 2 1/2 Cup Flour
Instructions:
- Cream together egg yolk, butter and sugar until light and smooth.
- Sift together the flour and salt.
- With a wooden spoon stir in about 1/2 of the sifted flour, knead in the remainder.
- Cover and chill dough in fridge for at least two hours, or overnight.
- Preheat oven to 375ºF.
- Roll out dough to 1/8 inch thick on a well floured work surface.
- Cut out desired shape.
- Bake in preheated oven for 8-12 minutes, until edges are just golden and bottoms are toasty colored.
- Allow cookies to rest on pan for 2 minutes before transferring to a wire rack to cool.
- Cookies are great as is, dusted with a little icing sugar, or frosted.
