Gluten Free Double Chocolate Cookies
aka Henry Santa Cookies
Ingredients:
- 1 1/2 Cups Gluten Free Flour Blend
- 1/2 Cup Cocoa Powder
- 1 Tsp Xantham Gum Powder
- 1/2 Tsp Salt
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Baking powder
- !/2 Cup Butter
- 1 Cup lightly packed Brown Sugar
- 1/4 Cup White Sugar
- 2 Eggs
- 2 Teaspoons Vanilla Extract
- 1 1/2 Cups chocolate chips.
Instructions:
- Sift together flour blend, cocoa powder, xantham gum, salt, baking soda, baking powder. Set aside.
- Cream the butter with the sugar until light and smooth. Add the eggs one at a time, blending until smooth, before adding the vanilla.
- Add the sifted dry ingredients in thirds,and stir into wet ingredients. Until evenly combined.
- Cover and chill dough at least two hours.
- Preheat oven to 350.
- Scoop 1-2 Tablespoon sized drops onto prepared tray, rolling into balls and pressing flat to about 1/2 inch thick. Bake for 8-12 minutes. Cool on pan for 2 minutes before transferring to rack to cool completely.
