Gluten Free Double Chocolate Cookies

aka Henry Santa Cookies

Ingredients:

  • 1 1/2 Cups Gluten Free Flour Blend
  • 1/2 Cup Cocoa Powder
  • 1 Tsp Xantham Gum Powder
  • 1/2 Tsp Salt
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Baking powder
  • !/2 Cup Butter
  • 1 Cup lightly packed Brown Sugar
  • 1/4 Cup White Sugar
  • 2 Eggs
  • 2 Teaspoons Vanilla Extract
  • 1 1/2 Cups chocolate chips.

Instructions:

  1. Sift together flour blend, cocoa powder, xantham gum, salt, baking soda, baking powder. Set aside.
  2. Cream the butter with the sugar until light and smooth. Add the eggs one at a time, blending until smooth, before adding the vanilla.
  3. Add the sifted dry ingredients in thirds,and stir into wet ingredients. Until evenly combined.
  4. Cover and chill dough at least two hours.
  5. Preheat oven to 350. 
  6. Scoop 1-2 Tablespoon sized drops onto prepared tray, rolling into balls and pressing flat to about 1/2 inch thick. Bake for 8-12 minutes. Cool on pan for 2 minutes before transferring to rack to cool completely.
